Pancakes to Impress
Ingredients
Pancakes:
1 cup of all purpose flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
3/4 cup of whole milk
1 egg
2 tablespoon of white vinegar
3 teaspoons of sugar
Pinch of salt
Coconut caramel:
1/2 cup of sugar
1/4 cup of coconut milk
1/4 tsp of salt
Mix in the all purpose flour, baking soda, baking powder, salt, and sugar in to a mixing bowl. Then add 2 tablespoons of vinegar into the 3/4 cup of milk and let it sit for about 5 minutes to allow the milk to curdle.
Pour the curdled milk into the flour mixture along with the egg and mix until smooth.
Preheat a medium size sauté pan and lightly coat it with oil.
Spoon in the batter to your preferred size and allow the bottom to cook until the top part of the pancake starts to form big bubbles. Flip the pancake over and continue to let it cook for another 1-2 mins or until the batter is fully cooked.
To make the caramel, place the sugar in a small saucepan and put it over medium heat. Allow sugar to melt before stirring.
Once it’s completely melted let it cook for another 5 mins or until the side of the pan begins to caramelised.
Stir it once more until the sugar becomes golden brown. Once sugar becomes a golden caramel colour add the coconut milk and salt and stir until it is fully incorporated.
Allow it to cool to room temperature before serving.
