Argentinian Chef Agustin Ferrando Balbi – you know him from HAKU – has opened Andō, his first solo restaurant launched in partnership with JIA Group. The name Andō comes from Balbi’s Latin surname, Ferrando; Andō in Japanese also means a sense of contentment, while in Spanish, it is the equivalent of ‘-ing,’ to describe the act of doing. Such complexity and multiplicity in meanings lie at the heart of Agustin’s cuisine at Andō, one that nods at his ancestral roots in Spain, while gazing at the land that shaped his craft – Japan.
