Asia’s 50 Best Restaurants revealed its list of its top 50 dining establishments in the region at a ceremony in Seoul on Tuesday. Six restaurants from Hong Kong are included in the rankings: The Chairman, Wing, Neighborhood, Mono, Caprice, and Ando. Sézanne in Tokyo claimed the No. 1 ranking in the region this year, while Singapore has nine restaurants on the list — the most of any city in Asia.

This year saw improved rankings for all the Hong Kong restaurants, with Wing being bestowed with the Highest Climber Award after climbing 32 spots from last year. In addition, The Chairman chef and owner Danny Yip was honoured with the Icon Award for his dedication to championing Cantonese cuisine on the global stage.

The Chairman is renowned for its dedication to putting Cantonese food on the map and is booked out months in advance. Diners at the one-star Michelin restaurant can only book online on certain days and order one of the set menus emailed to them a few days before their reservation. While the restaurant has been at a new location since 2022 and has a refreshed menu, favourites like steamed crab with Huadiao are still on offer.

Wing, No. 5 (No. 37 in 2023)

This restaurant, helmed by Vicky Cheng, combines the chef’s love of his culinary roots and expertise in French cuisine and focuses on modern Chinese cooking. Diners can sample individually plated dishes from one of two tasting menus, which include braided strips of smoked eggplant in sour sauce and a spring roll with whole sea cucumber.

Hong Kong chef David Lai brings his love of French cuisine to the fore at this restaurant, which puts the spotlight on seasonal produce. Favourites include the salt-baked chicken served with rice in a creamy yellow wine and morel mushroom sauce. There is a thoughtfully selected wine list, but diners can bring their own bottles if they wish.

Adventurous gourmands head to chef Ricardo Chaneton to sample his modern Latin American offerings, which include cachapas (Venezuelan corn pancakes) with caviar and murupi chillies native to South America, and Mexican tetelas (corn masa pockets) with escargot stew. Mono also uses cacao pods from Ecuador to make its own chocolate.

Diners who want an experience that’s the epitome of luxury head to this Guillaume Galliot-helmed restaurant at the Four Seasons. The signature dish — king crab with crustacean jelly and prestige caviar — is served in a glass sphere, while the Kagoshima wagyu beef with wild mushroom socca and a decadent red wine sauce has an optional white truffle topping. And you can enjoy it all beneath opulent crystal chandeliers while admiring sweeping views of Victoria Harbour.

Ando, No. 37 (No. 61 in 2023)

Argentinian chef Agustin Balbi’s restaurant made its debut on the extended 51-100 list lin 2023 and shot up into the top 50 this year thanks to the chef’s dishes that take inspiration from Spain, Italy, Argentina, and Japan. His signature dish, Sin Lola, is a rice stew made with ingredients such as chorizo and abalone, or clams and sake.

Earlier this month, Asia’s 50 Best restaurants unveiled its extended list in which it named the dining establishments that made it to its 51-100 rankings for 2024. It featured six restaurants from Hong Kong — Xin Rong Ji, Ta Vie, Vea, Estro, Godenya, and Howard’s Gourmet — which gives Hong Kong a total of 12 restaurants in the top 100.

The next big culinary event is the 2024 edition of The World’s 50 Best Restaurants, which will take place in Las Vegas on June 2024. Last year, The Chairman was the only restaurant from Hong Kong to feature in this list, and placed at No. 50 in the rankings.
